Week 4 Basic Training

Week Four Basic Training-A Chicken In Every Pot (Cooking with Poultry)

$325-Six Week Series. See the Classes page for description of entire series.  Please note that this class meets Saturdays January 14 through March 10 with the exception of January 21, February 18 and February 25. 

Practice the skills that you have developed over the prior three weeks as we learn all about chicken and other poultry. We will focus on dividing a whole bird into parts, trussing, roasting, pan searing, braising, and making pan sauces. Recipes will vary according to availability of ingredients but may include Braised Chicken with Tomatoes and Olives, Spice Rubbed Chicken with Lemongrass Dressing, Yogurt-Marinated Chicken Kebabs with Aleppo Pepper and/or Seared Duck Breasts with Red-Wine Sauce and Candied Kumquats.
