Recipe of the Week

Chocolate Chip Zucchini Bread:

Adapted from Paula Deen

3 cups all purpose flour

1/2 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon baking soda

3 eggs

2 cups white sugar

1 cup vegetable oil

2 teaspoons vanilla extract

2 cups grated zucchini

1 cup semisweet chocolate chips

1 Tablespoon orange zest

Preheat oven to 350 degrees F.  Grease (2) 9 by 5 inch loaf pans.  Whisk together flour, baking powder, salt, spices and baking soda.  In a separate bowl, beat eggs until light and fluffy.  Add sugar and blend well.  Stir in oil, vanilla, zucchini, chocolate chips, and orange zest.  Stir in flour mixture and pour into prepared pans.  Bake for 50 minutes or until skewer inserted in the middle comes out clean.  Remove loaves from pans and cool on rack. Cool thoroughly before slicing.
